Tom Yum Shrimp Soup is a classic Thai dish that balances spicy, sour, salty, and savory flavors. Here’s an easy recipe to make this delicious soup at home:

  • Ingredients::
    • For the broth:
  • 4 cups chicken or vegetable broth
  • 2-3 stalks lemongrass, cut into 2-inch pieces and crushed
  • 5 kaffir lime leaves, torn into pieces
  • 1-inch piece of galangal, thinly sliced (or substitute with ginger)
  • 4-5 Thai bird’s eye chilies, crushed (adjust to taste)
  • 2-3 tablespoons Thai chili paste (nam prik pao)
    • For the soup:
  • 12 oz (340g) large shrimp, cleaned and deveined
  • 1 cup mushrooms, halved (preferably straw mushrooms, but button mushrooms work too)
  • 1 medium tomato, cut into wedges
  • 1 small onion, sliced
  • 2-3 tablespoons fish sauce (adjust to taste)
  • 3 tablespoons lime juice (adjust to taste)
  • Fresh cilantro, chopped for garnish
  • Optional: 1 teaspoon sugar (to balance flavors)
  • Optional: Thai basil leaves for garnish

Instructions:

  1. Prepare the Broth:
    • In a large pot, bring the chicken or vegetable broth to a boil.
    • Add the lemongrass, kaffir lime leaves, galangal, and Thai birdโ€™s eye chilies.
    • Reduce the heat and let the broth simmer for 10-15 minutes to allow the flavors to infuse.
  2. Add the Soup Ingredients:
    • Add the mushrooms, tomato, and onion to the simmering broth.
    • Let them cook for about 5 minutes until the mushrooms soften.
  3. Add the Shrimp:
    • Add the shrimp to the pot. Cook for 3-5 minutes, or until the shrimp turn pink and are fully cooked through.
    • Stir in the Thai chili paste (nam prik pao).
  4. Season the Soup:
    • Add fish sauce and lime juice to the soup. Taste and adjust the seasoning as needed. If it’s too sour, add a small amount of sugar.
    • Adjust the heat level by adding more chilies or chili paste if desired.
  5. Serve:
    • Remove the soup from heat and discard the lemongrass and kaffir lime leaves, if desired.
