  • 2 tablespoons peanut butter
  • 1-2 tablespoons water (to thin the sauce)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Crushed peanuts (for garnish)

Instructions:

1. Prepare the Ingredients:

Start by prepping all the filling ingredients. Cook and slice the protein of your choice (shrimp, chicken, or tofu). Shred the carrots and cabbage, julienne the cucumber, and prepare the fresh herbs. If using avocado, slice it thinly. Cook the rice noodles according to package instructions, if using.

2. Make the Dipping Sauce:

In a small bowl, combine hoisin sauce, peanut butter, soy sauce, rice vinegar, and sesame oil. Mix until smooth. If the sauce is too thick, add water a little at a time until you reach the desired consistency. Garnish with crushed peanuts.

3. Soften the Wrappers:

Fill a large shallow dish or pie plate with warm water. Submerge one spring roll wrapper in the water for about 10-15 seconds until it becomes soft and pliable. Be careful not to over-soak, as the wrappers can tear easily.

4. Assemble the Spring Rolls:

Place the softened wrapper on a clean, damp kitchen towel or cutting board. In the center of the wrapper, place a small amount of each filling ingredient: protein, shredded vegetables, cucumber, fresh herbs, and avocado (if using). Add a small handful of cooked rice noodles if desired.

Fold the bottom of the wrapper over the filling, then fold in the sides, and roll it up tightly like a burrito. Repeat with the remaining wrappers and filling ingredients.

5. Serve:

Arrange the finished spring rolls on a serving platter. Serve immediately with the dipping sauce on the side.
